Passion fruit puree gives this cocktail its vivid fruit flavour, acidity and rounded texture. Vanilla vodka and vanilla sugar soften the tartness, while passion fruit liqueur reinforces the aroma. Shake thoroughly to dissolve the sugar and aerate the puree into a fine foam. Serve the Champagne in a separate small glass so its dry bubbles provide a contrast to the richer cocktail.
